Why do stablecoin checkouts still feel like beta tests for normal shopping?

I tried paying for a coworking day pass with USDC last week. The price was clear, but then I had to pick a network, confirm gas, wait for confirmations, and hope the café’s system actually saw the payment. What’s missing for this to feel as boring and reliable as tapping a card?
